Ingredients:
2 3/4 cups flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp salt
2 cups sugar of your choice
1 1/2 cups coconut oil
4 eggs
1 tsp vanilla extract
3 1/2 cups shredded carrots
1 cup raisins (optional)
1 cup pecans (optional)
Directions:
Preheat oven to 350F
Mix oil and sugar. Add one egg at the time. Add vanilla, salt, cinnamon and baking powder. Slowly mix in flour. Add everything else and mix briefly.
Butter a 12″ pan, add mixture. Bake for 40 minutes or longer until tooth pick comes out clean. Cool for 10 mins and enjoy.
